Chicken Rice Casserole 3 lb. chicken 1 tsp. salt 1/4 tsp. pepper 3 tbsp. cooking oil 1 C. chopped onion 2 C. cooked rice |
| Cut chicken into serving size pieces, sprinkle with salt and pepper. Brown chicken in hot oil, about 15 min. Drain on paper towels, saute onions until transparent, add remaining ingredients. Pour into a greased casserole. Arrange chicken on top, cover, Bake at 350 for about an hour until chicken is tender. |
