Chicken Gumbo

3 cups chopped chicken
2 T. seasoned salt
1/2 cup chopped onions
1/2 cup chopped bell peppers
1 cup chopped celery or 1T. celery salt
3 cups chicken broth
2 cups canned tomatoes
1 bay leaf
2 cups sliced okra
2 T. parsley
1/4 t. hot pepper sauce
1/2 t. file`
Salt & pepper to taste
Cooked rice

Boil chicken in large container with seasoned salt added to water. Remove chicken when done and save broth. Saute onion, bellpepper & celery in small amount of oil. Add sauteed veggies and all other ingredients, except chicken and rice, to the broth and simmer for 30 minutes. Add chicken, season to taste, and heat thoroughly. Serve over rice..Yield: 8 to 10 servings.. Note: Freezes well..
