Fold-Over Tortilla Bake (Margaret Ann) 1 lb. ground chuck 1-2 t. ground cumin 1 cup chopped onions 1/2 t. salt 2 cans(141/2 oz) stewed tomatoes 1/4 t. pepper 1 cup enchilada sauce 2 pkgs.(3 oz) cream cheese,softened 2 cans green chilies,drained and chopped 12 flour tortillas

| Brown beef and onions, drain. Stir in tomatoes, enchilada sauce and seasoning. Bring to boil, reduce heat and simmer covered for 5 minutes. Pour half of meat sauce into a 13x9x2 baking dish. Set aside. Wrap the stack of tortillas in foil, warm @350 for 8-10 minutes. Spred warm tortillas with cream cheese and top with green chilies, fold tortillas in half, arrange over meat sauce in dish, pour remaining meat sauce over top. Cover and bake @350 for 15 minutes..Take out and sprinkle cheese on top and bake another 5 minutes or until cheese melts.. Delicious!!! |
