Mom & Aunt Ruth's Country Pot Roast
(Mom - my Mother-in-Law)

1 3lb Chuck or Round Roast
1 medium or large onion, sliced
Potatoes and carrots
1-2 cups of boiling water Seasonings of your choice
All-purpose flour
Oil

Season roast and coat with flour. Brown in a large cast iron skillet in just enough oil to cover the skillet. Add onions. Add water around the sides. Place the potatoes and carrots around the sides. Cover with foil. Roast at 350 for approximately 1.5 hours.
