Peanut Butter Pie (Mother) 1 baked pie shell 3 egg whites for meringue 1 cup powered sugar 1/2 cup peanut butter 1/4 cup cornstarch 2/3 cup sugar 1/4 tsp salt 2 c milk (scalded) 3 egg yolks, beaten 2 Tbsp butter 1/4 tsp vanilla extract |

Combine powdered sugar and peanut butter.
Blend until the appearance of biscuit mix.
Spread 3/4 of this mixture on pie shell.
Combine cornstarch, sugar and salt. Add scalded milk and mix well. Pour small amount over beaten egg yolks. Mix well, then return to milk mixture. Cook in top of double boiler until mixture thickens. Add butter and vanilla; then pour into prepared pie shell. Top with meringue. Sprinkle remainder of peanut mixture over meringue. Bake at 325 degrees F. until meringue is brown. |
